wow. I haven't done a post in ages!!!......
As with nearly all asian families, the parents (in this case my dad) buys everything in bulk when it's uber cheap. So now there are a bunch of bananas sitting in the kitchen going black with a dozen fruit flies swarming the area. Or there are still nectarines sitting in the fridge going wrinkly and dry. In these cases, I do NOT want to eat these fruits because they look unappetizing. So I made an effort to look for ripe banana recipes and came across a banana pancake recipe by Huey that looked good. I don't usually use Huey's recipes because like my brother always says "all he uses is chicken stock". But I found this recipe to be good!
125g plain flour
pinch of salt
1 tsp baking powder
1 medium egg
200ml milk/buttermilk
2 medium bananas
approx 30-50g butter
1. sift flour, salt and baking powder in a bowl
2. stir in the egg
3. whisk in the milk
4. slice the bananas, add to the batter and stir
5. melt the butter in a pan you're going to use and whisk into the batter
6. then basically dollop some batter on the pan and cook!
So it's really really easy and uses minimal equipment which means less washing up!
And one more thing. I have recently discovered this jam:
It tastes really good and is:
- Gluten Free
- No preservatives
- No added pectin
- No colourings
You can buy it at coles (or woolworths maybe?) and have it with biscuits or toast!
