Lime Tart-ish things

So today I attempted to make Mini Key-Lime pies using Nigella Lawson's recipe (although I used normal muffin tins instead of mini-ones). Let me just say that it tastes better than it looks. Moulding the biscuit mixture in the tins was a very tedious task and half way through i was like "Ok. Screw This." So thats why the biscuit base is really thin...Also, I ran out half way :P It was a really easy recipe to follow and it tastes really good! Almost as good as the lime tarts from Pattisons.. :P So here is the verdict:




Anyway, if you want the recipe, here it is:

100g unsalted butter
250g digestives
2 large eggs, separated
1 x 200g can sweetened condensed milk
zest and juice of 2 limes
pinch of salt
2 x 12-bun mini-muffin tins

1. Preheat oven to 170 degrees centigrade
to make the biscuit base:
2. Melt the butter in a pan
3. Put the digestive bisuits roughly broken up into a processor and blitz. Still processing pout the butter down the funnel
4. Put a heaped tablespoon of biscuit into each tin and press around the edges and up the sides with your fingers
5. Place in fridge to cool and harden
to make the filling:

6. Beat the egg yolks until thick - using an electric mixer
7. Still beating, add the condensed milk and lime juice
8. In a separate bowl, whisk the egg whites with salt until soft peaks form and gently fold into the yolk mixture
9. Fill the biscuit based tins using a spoon
10. Transfer to the oven and bake for 10 mins
11. Remove, let cool and refrigerate for a day
12. To remove, gently prise it out of the tins using a knife or if your impatient, turn the tin upside down and rap firmly.
13. Garnish with some lime zest on top
